Caramelized Rhubarb with Pistachios and Cardamom
Ingredients:
4 rhubarb stalks, sliced on a diagonal
1/2 cup coconut sugar
1/2 tsp ground cardamom
1/3 cup pistachios
To make:
Preheat oven to 400F
Toss rhubarb with sugar and cardamom and let sit until some of the juices of been extracted, about 10 minutes. Add pistachios and toss well. Cook until rhubarb is soft, caramelized, and bubbling. Serve with yogurt or Creme fraiche.
